Spiced Pumpkin Soup with Poppadom 'Croutons'

Want to make the perfect spooky season pumpkin soup? Try this spiced recipe for size, made with edible winter squash from The Pop Up Farm, plus mango chutney, creamed coconut, and a garnish of poppadoms for dipping. 

This tastes like a rich, mild pasanda, with the pumpkin and coconut adding sweetness and the spices giving a gentle, warming heat. And while it may look like a lot of ingredients, it’s as easy to make as any other soup (plus the squash doesn’t need peeling – just blend everything together and it tastes delicious).

Ingredients

  • 2/3 x Winter squash / pumpkin: mine were kindly gifted by @the_pop_up_farm, chopped
  • 4 x tomatoes, sliced
  • 2 x onions, sliced
  • 3 x garlic cloves, minced
  • Good chunk of ginger (or ginger puree – I used one with added turmeric)
  • 2 tsp turmeric
  • 2 tsp medium curry powder
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • Stock cube
  • 1 x tablespoon mango chutney
  • Half a block creamed coconut
  • Salt & pepper
  • 2 to 3 large mugs of water

Garnish:

  • Pumpkin seeds
  • Fresh coriander
  • Poppadoms for scooping

Instructions

Season your pumpkin with turmeric, salt and pepper and oil and roast in the oven on 180c for approx. 25 minutes while you sauté your onion, garlic and spices in a pan over a low heat.

Spoon your pumpkin into the pan and then add in chopped tomatoes, a stock cube, mango chutney, creamed coconut, fresh coriander and a few mugs of water. 

Simmer and then blitz with a hand blender for a few minutes, before checking the seasoning – adding more spices if too mild or more water if too thick.

Ladle into bowls and add a garnish of pumpkin seeds, more coriander and poppadom shards to scoop up the soup (just eat them quickly so they don’t go super soft).
