Savoury Pumpkin Fritters

These autumn savory pumpkin fritters are absolutely delicious, made with the rich and flavorful pumpkin from The Pop Up Farm. You should spend a day at there, you can feel the pure magic in the air, and the pumpkins they offer are simply wonderful.

Ingredients

For the pumpkin fritters:

• 200g cooked pumpkin
• 100g chickpea flour
• 140g water
• 1 teaspoon cream of tartar
• ½ teaspoon baking soda
• 1 teaspoon curry powder
• A few fresh sage leaves
• Salt, to taste
• 1 tablespoon extra virgin olive oil (EVO)
• Oil for frying

For the optional yogurt sauce:

• Unsweetened plant-based yogurt
• 1 tablespoon extra virgin olive oil
• Salt, to taste
• A pinch of turmeric and black pepper

Instructions

  1. Prepare the pumpkin: Preheat your oven to 180°C (350°F). Cut the pumpkin and cook in the oven for about 30 minutes, or until it becomes soft. Once cooked, let it cool slightly and scoop out the flesh.
  2. Make the batter: In a large bowl, mix together the chickpea flour, baking soda, cream of tartar, and water. Stir until smooth.
  3. Add the pumpkin: Add the cooked pumpkin flesh to the batter. Blend everything with an immersion blender until you get a smooth mixture. Stir in the extra virgin olive oil, fresh sage leaves (finely chopped), and salt to taste.
  4. Fry the fritters: Heat oil in a frying pan over medium heat. Once hot, drop spoonfuls of the batter into the oil. Fry each fritter for 2-3 minutes per side, or until golden brown and crispy. Remove and drain on paper towels.

Serve: Serve the fritters hot. You can pair them with a simple yogurt dipping sauce for extra flavor.

🌱 Yogurt Sauce: 
Mix the plant-based yogurt with olive oil, salt, turmeric, and a pinch of black pepper. Let the sauce sit for 10 minutes before serving.

🌱 Note:
The amount of water you need may vary depending on the type of pumpkin used. The batter should be thick but not too runny, as shown in the video.
