Gilly's Pumpkin Sultana Cake

This delicious autumnal pumpkin and sultana loaf is super easy to make and perfect with a cuppa. If you don’t believe us, take a look at the video below from Farmer Ian!
Ingredients
125g butter or margarine
250g sultanas
1 teaspoon vanilla extract
1 cup of cold, mashed pumpkin
1/4 cup light brown sugar
2 tablespoons of honey
2 eggs
2 cups of self-raising flour
Instructions
Cream the butter and sugar. Add eggs, beating well, then the honey and vanilla. Beat well again. Stir in the sultanas, then the pumpkin, alongside with the flour.
Once combined, place in a well-greased 9” x 5” loaf tin.
Bake in a moderately slow oven for 1 hour. Let stand for 5 minutes before turning onto a cooling rack.
